There isn’t a more popular dish in the caribbean (Puerto Rico, Dominican Republic, Cuba) than the rice & pigeon peas (arroz con gandules) cuisine. This caribbean signature dish is serve along with meats like roast pork (pernil) and chicken (pollo). Puerto Ricans, Dominicans and Cubans always serve the carribbean rice & pigeon peas during holidays, birthdays and festive occasions along with other crowd-pleasing dishes. Rice and pigeon peas is made by using sofrito which is made out of healthy herbs and vegetables.

Some of my favorite moments growing up in a large Puerto Rican household was bonding over healthy and delicious meals which included rice and pigeon peas. My family prefer to serve it with chicken or fish instead of roast pork (pernil) because it’s healthier. When I make it at home I use brown rice instead of white rice. Recently I made rice and pigeon peas and added Genesis Today Greens and Resveratrol to it. At first I was afraid it was going to taste a little weird but it didn’t change the taste.

Rice:

Pigeon Peas:

  • is a good source of protein, dietary fiber. Enriched with various vitamins: thiamin, magnesium, phosphorus, potassium, copper, and manganese. 100g of mature raw pigeon peas also provide 114% of the daily requirement of folate.

Sofrito:

  • green bell peppers/sweet chili peppers  is enriched in potassium,  folic acid, fiber, vitamin A and C.
  • garlic naturally makes our red blood cells into the cell messenger hydrogen sulfide (H2S). It relaxes blood vessels and increases blood flow and reduces the risk of heart disease.
  • onions is enriched in potassium and powerful sulfuric compounds which may lower high blood pressure, reduce heart attack, and help protect against cancer.
  • culantro or cilantro is enriched in calcium, iron, carotene, and riboflavin.

Caribbean Rice & Pigeon Peas With Genesis Today Super Foods

Save Recipe

Ingredients

  • 1/3 cup of olive oil
  • 1/3 cup of homemade sofrito (if you do not know how to make homemade sofrito it can purchased at your local supermarket frozen section)
  • 2 teaspoon of Genesis Today Resveratrol
  • 1 scoop of Genesis Today Greens
  • 2 teaspoon of salt
  • 1 teaspoon of Italian seasoning
  • 1 packet of sazon con achiote y culantro
  • 1/3 of tomato paste
  • 2 cans of pigeon peas
  • 3 cups of brown rice
  • 4 1/2 cups of water

Instructions

  1. add olive oil into pan
  2. add sofrito, and heat pot in love for 1 minute
  3. add tomato paste
  4. add salt
  5. add Italian seasoning
  6. add Sazon (con culantro y achiote)
  7. add Genesis Today Resveratrol
  8. add Genesis Today Greens
  9. add pigeon peas (gandules verdes)
  10. stir and cook on low heat for 2-3 minute
  11. add ham and olives (optional)
  12. add rice, water and stir everything together (taste liquid to make sure it is well seasoned, if it's not, add a little bit of more salt)
  13. cover pot completely and cook low for 20 minutes
  14. stir rice, cover the pot completely and cook for an additional 10 minutes
  15. water should be evaporated, stir rice and cook again for 5 minutes
  16. finally check to see if rice grains are soft and fluffy

Notes

* Please make sure to leave the cover completely closed because the steam is what cooks the rice completely. If the heat escapes it will take forever to cook.

Also add chopped ham and/or green stuffed olives if preferred. You can serve it with any type of meat or fish of your choice.
